COTTAGE CHEESE FRUIT BREAD image

Yield 1 loaf

1/2 c butter, at room temperature
2/3 c packed lt brown sugar
4 t grated lemon zest
4 t grated orange zest
2 c small curd cottage cheese, room temperature
2 lg eggs, slightly beaten
2 c flour
1 T baking powder
1 t baking soda
1 t salt
2 c dried currants

Steps:

  • 1. Preheat oven to 350F. 2. In a large mixing bowl, cream the butter and brown sugar for 1 minute on high speed; reduce speed to medium and beat 3 minutes. Mix in the zests, then add cottage cheese and eggs; beat well. 3. In a small bowl, whisk together the flour, baking powder, soda and salt. Add the currants to the dry ingredients and stir well. Slowly add the dry ingredients to the egg mixture; mix until well blended. The batter will be quite stiff. 4. Grease a 5 x 9 x 3-inch loaf pan and gently spoon in the batter, lightly smoothing the top. Bake for 1 hour and 15 minutes, then check with a skewer for doneness. Bread may take an additional 5-10 minutes. Allow the bread to stand 10 minutes then turn out onto a rack to cool completely. Serve with butter or cream cheese.
