Cornmeal Cookies image

Introduce your family to a new type of cookie tonight, and bake a batch of these Cornmeal Cookies. With just a few ingredients and less than half an hour off cook time, these Cornmeal Cookies are the definition of sweet and simple!

Yield 20 servings, 1 cookie each

Number Of Ingredients 7

1 cup flour
3/4 cup cornmeal
2 tsp. baking powder
12 Tbsp. butter, softened
3/4 cup sugar
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2 eggs

Steps:

  • Heat oven to 375°F.
  • Combine flour, cornmeal and baking powder. Beat butter, sugar and dry pudding mix in large bowl with mixer until blended. Add eggs; mix well. Gradually add dry ingredients, mixing well after each addition.
  • Drop 2-Tbsp. portions of dough, 2 inches apart, onto baking sheets.
  • Bake 10 to 12 min. or until lightly browned. Cool 3 min. Remove from baking sheets to wire racks; cool completely
