Corned Beef & Cabbage Hoagies image

I made this recipe because I discovered some chopped corned beef in my freezer that I needed to use and I wanted to do something different with it. This came out really good!

FOR THE TOPPINGS
2 c shredded cabbage or fresh cole slaw mix
1 large thinly sliced onion
1 Tbsp butter
1 Tbsp extra virgin olive oil
FOR THE SANDWICH
1 pkg pepperidge farm bakery classics top sliced hot dog buns, toasted
2 lb cooked corned beef brisket, chopped
8 slice swiss cheese

Steps:

  • 1. In a large skillet melt butter with olive oil over medium high heat.
  • 2. Add onions. Saute until starting to caramelize. Add shredded cabbage and cook until cabbage is wilted.
  • 3. Add diced corned beef brisket to hot dog bun. Top with fried cabbage mixture and a slice of swiss cheese.
  • 4. Place sandwiches on a cookie sheet and place in oven under broiler, just until cheese starts to brown and tops of bread starts to toast. (1 or 2 minutes)
  • 5. Serve with Chips or Fries and a Pickle!
