Corn Salad With Tomatoes, Feta and Mint image

Number Of Ingredients 7

1 can chick peas
2 medium ripe tomatoes, cut into fairly small pieces
4 ounces feta cheese, crumbled
3 tablespoons extra virgin olive oil
1/2 cup chopped fresh mint leaves
1 pinch Salt and freshly ground black pepper to taste
3 cups cooked corn kernels (from 4 - 6 cobs)

Steps:

  • Put the corn, tomatoes, chick peas, and cheese in a medium salad bowl. Drizzle with the olive oil and toss.
