CORN PUDDING BEAUMONT INN image

Number Of Ingredients 6

2 cups fresh corn kernels, cut from 4 ears of corn, or 10 oz. frozen, thawed
1/2 cup all purpose flour
1/2 stick A(1/4 cup) unsalted butter, melted
1 teaspoon salt
4 large eggs
4 cups milk

Steps:

  • Preheat oven to 450 degrees. Butter a 13 x 9 inch baking pan. In the baking pan, melt butter (oven or microwave). Add the corn, flour, sugar and salt and stir until combined. In a bowl, beat the eggs until they are well combined, and add the milk, beating well. Place the baking pan with the corn mixture in the middle of the preheated 450 degree F oven. Carefully pour the milk and egg mixture into the pan with the corn mixture and stir. Bake for 45 minutes. Stir vigorously with a long-pronged fork for a few seconds after 15 and 30 minutes. The stirring gives a fluffy texture.
