CORN BREAD LOAF image

Number Of Ingredients 11

1.5 c all purpose flour
1.25 c yellow corn meal
3/4 c sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1/2 c vegetable oil
1/2 c milk
1/2 c buttermilk
1 c fresh corn kernels

Steps:

  • Preheat oven to 350. Grease 9 x 5-inch loaf pan (I use 9x 13-inch pan). Dust pan with cornmeal and shake out excess. Mix first 6 ingredients together in large bowl. Whisk eggs, oil, milk and buttermilk in medium bowl. Add egg mixture and corn to dry ingredients and stir until just combined. Pour batter into prepared pan. Bake 15 minutes, then reduce temp to 325 and continue baking until tester inserted into center comes out clean, about an hour.
