Cool Cucumber Dill Salad image

This is soooo yummy, cool refreshing, easy and no mayo in the sun worries. (this photo was not taken by me)

Number Of Ingredients 7

1 medium red onion
3 peeled and seeded cucumber ( i like english cucumbers but they can be too expensive if you are making large batches)
3 Tbsp rice vinegar
2 Tbsp olive oil
2 Tbsp fresh dill, chopped
salt and pepper to taste
black and regular sesame seeds to garnish (optional) but very good)

Steps:

  • 1. Toss sliced onions with 1 TBLS Rice Vinegar, set aside
  • 2. Place peeled, sliced, seeded cucumbers in a colander and toss with 1/4 tsp of salt, let drain 10 minutes then pat dry.
  • 3. in a large bowl mix onions and cucumbers with olive oil, remaining (2 TBLS) of vinegar and dill. Season (salt and pepper) garnish (sesame seeds) and chill until served ( about 30 minutes is preferable, but is optional)
