Colony Mountain Chili image

Got this recipe in a 2004 Taste of home magazine. It's really nice on a cold winters day. I know some wouldn't consider it chili because of the beans but it is really good.

Number Of Ingredients 19

1 pound boneless beef sirloin steak cut into 3/4 cubes
4 italian sausages links, casings removed and cut into 3/4 inch slices
2 Tbsp olive oil divided
1 medium onion chopped
2 garlic cloves minced
2 green onions thinly sliced
2 tsp beef bouilon
1 c boiling water
1 6 ounce can tomato paste
3 Tbsp chili powder
2 Tbsp brown sugar
2 Tbsp worcestershire sauce
2 tsp ground cumin
1 tsp crushed red pepper flakes
1 tsp salt
1/2 tsp pepper
3 cans 141/2 ounce diced tomatos
3 15 ounce cans pinto beans rinsed and drained
shredded cheese optional

Steps:

  • 1. In larg skillet brown the beef and sausage in 1 tablespoon oil. drain
  • 2. Transfer meat to a 5 quart slow cooker.
  • 3. In the same skillet saute the onio, garlic and green onion in remaining oil until tender. Transfer to slow cooker.
  • 4. In small bowl dissolve bouilon in water. Stir in tomato paste, chili powder, brown sugar, worcestshire sauce, and other seasonings till well blended. Add to slow cooker.
  • 5. Stir in tomatos and beans.
  • 6. Cover and cook on high for 6 ot 8 hours or until the meat is tender.
  • 7. Serve iwht cheese if desired.
