Collard Greens image

Not only do collard greens taste great... they are healthy too. I hope you will enjoy this flavorful dish, hopefully it will make a collard lover out of you.

Number Of Ingredients 13

1 1/2 pound collard greens, rinsed, trimmed (ribs removed) and chopped
3 - 4 tbsp spiced butter (or oil)
1 small onion, finely chopped, (red, white or yellow)
2 garlic cloves, finely chopped
2 tsp fresh ginger, minced
1 tbsp spiced butter (or oil)
1 fresh,(yellow or red) hot pepper, finely chopped, (remove seeds unless you like it hot)
1 tbsp fresh lemon juice,
1 tsp salt, sea, fine
1 tsp hot paprika
1/2 tsp coriander, ground
1/4 tsp cardamom, ground
1/2 tsp allspice, ground

Steps:

  • 1. In a large pot add 2 cups of water and the collard greens and bring to a boil. Turn the heat to low, cover the pot and simmer for about 15 minutes. Drain the greens, reserving the cooking water and set aside until needed.
  • 2. Set a large pan over medium high heat and added the butter or oil. Add the onions and cook for 7 - 10 minutes, then stir in the garlic and ginger.
  • 3. Now you are going to add the drained greens, 1 tbsp butter or oil and the reserved cooking water into the pan and simmer, uncovered on medium high heat 15 minutes.
  • 4. Add the green pepper, lemon juice, salt, and spices and cook for 5 more minutes.
