Chocolate Chip Cookies image

A friend of a friend of the family who was a baker sent for a recipe in a trade journal. He was thrilled w/the recipe, but sometime later he was send a bill for $250, which he paid, but he gave the recipe to anyone who might be interested in it. It is the best recipe i've ever come across. However, it barely fits into my 5 qt....

2 c butter, softened
2 c granulated white sugar, organic also works
2 c brown sugar, firmly packed
4 eggs
1 Tbsp pure vanilla extract
2 tsp baking soda
2 tsp baking powder
4 c flour, sifted i use unbleached or whole grain white if i can find it
5 c oat flour, i just put the oats in the blender i don't make the flour fine i prefer old fashioned, but you may use whatever you have
24 oz chocolate chips, or mint chips or white chips or butterscotch or peanut butter or any combination =)
18 oz hershey bars broken [i use about 1/2 of the chocolate chips and bars the recipe calls for]

Steps:

  • 1. Preheat oven to 375 w/the rack in the middle of the oven. Cream the butter until light and fluffy, gradually add the white sugar, and then the brown sugar, you don't want this mixture too grainy, it will take between 10 - 15 minutes
  • 2. Add eggs one @ a time, just until mixed in. i crack them into a bowl before i add them, i've come across bloody eggs and prefer not to use them. Don't over mix. Mix in vanilla.
  • 3. Sift white flour and leavening agents together. i use 4 sheets of wax paper for this step. it makes it easier to add to the creamed mixture. Add about a 1/2 of the the flour mixtures @ a time. For this step i add my dough hooks. Add chocolate chips & bars [i use a 12 oz. package of chips and 6-9oz of bars] my boys prefer white chocolate so i use the white chocolate chips and the cookies & cream bars =)
  • 4. i use a 1 1/2" dough scoop. Bake @ 375 for 8-11 minutes
