Lilac Jelly image

I received this recipe from a pen pal.

Number Of Ingredients 5

2 c lilac blossoms, no leaves and no stems
2 1/2 c boiling water
1/4 c lemon juice
4 c sugar
1 box sure-gel or 6 tablespoons powder pectin

Steps:

  • 1. Put blossoms in a large jar and pour boiling water over them.
  • 2. Let steep for 8 hours or overnight.
  • 3. Strain and squeeze flowers dry. You should have 2 1/4 cups of infusion. Add more water, if needed.
  • 4. Place infusion, lemon juice, and pectin in large heavy pot.
  • 5. Bring to a rolling boil.
  • 6. Add sugar, stirring.
  • 7. Return to boil. Boil for 1 minute, stirring constantly.
  • 8. Remove from heat. Skim off foam, if needed. Note: adding 1 teapoon butter before sugar cuts down foaming
  • 9. Ladel in hot jars, leaving 1/4 inch head space.
  • 10. Wipe rim, screw on lids.
  • 11. Put in water bath (warm to hot water) - be sure that water is 1 inch over jars.
  • 12. Process for 10 minutes.
  • 13. Remove and cool.
