COGNAC MUSHROOM ONION SAUCE image

Number Of Ingredients 6

1 stick of butter
2 oz of cognac or brandy
1 lb mushrooms, stems cut so they lay flat
8 oz pearl onions
1 1/2 tbsp. lemon juice
3/4 cup chicken broth

Steps:

  • Melt 1/4 cup butter in a lrge pan, lsay mushrooms flat, sautee and then turn over to brown other side Add onions and cook. Lower heat, cover and cook til tender Add cognac and lemon juice and cook till reduced, Add the broth and cook till reduced Add the last 1/4 cup butter and swirl around the pan and let the sauce thicken. Keep warm
