COGNAC CRANBERRY SAUCE image

Number Of Ingredients 8

1 pound fresh cranberries
3/4 cup maple syrup
1/2 cup cognac
1/2 cup sugar
zest and juice of 1 orange
Dash of cinnamon
Dash of ginger
Dash of Cardamom

Steps:

  • In a medium saucepan, combine cranberries, maple syrup, cognac, sugar, orange zest and juice, cinnamon, ginger and cardamom. Bring to a boil, stirring to dissolve sugar. Reduce heat to medium. Simmer for 4 minutes, stirring constantly. Remove from heat. Using a slotted spoon, remove 1/2 cup whoel berries for garnish (if desired). Continue simmering remaining berries, stirring constantly, until all berries have popped and the sauce is a velvety juice -- 6 to 7 minutes. Strain if desired, and cool.
