COCONUT BEER BATTER SHRIMP image

Number Of Ingredients 16

2 eggs
1 3/4 C all-purpose flour
3/4 C beer
1 Tbs baking powder
4 doz. prawns, peeled & deveined
3 C coconut, grated
Seasoning Mix
1 Tbl cayenne pepper
2 1/4 tsp salt
1 1/2 tsp sweet paprika
1 1/2 tsp black pepper
1 1/4 tsp garlic powder
3/4 tsp onion powder
3/4 tsp thyme, dried
3/4 tsp oregano, dried
vegetable oil for deep frying

Steps:

  • Combine all seasoning ingredients, & set aside. Mix 1 1/4 C. of the flour, 2 tsp of the seasoning mix, baking powder, eggs, & beer together. Combine remaining flour with 1 1/2 tsp of the seasoning mix. Sprinkle both sides of prawns with remaining mix, the dredge in flour mixture, the batter mixture. Then coat prawns with coconut. Deep fry until a golden brown.
