Coconut Bean Soup image

Number Of Ingredients 12

1/2 cup onions, finely chopped
1/2 cup green peppers, finely chopped
1 teaspoon curry powder
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter
1 cup tomato, cut into 1/2-inch pieces
24 ounces kidney beans, with liquid
2 cups coconut milk
3 cups water
1/2 cup cooked rice
8 teaspoons shredded coconut

Steps:

  • In a 3-qt saucepan, saute onions and peppers with curry powder, salt, pepper and butter, until brown.
  • Add tomato, simmer for two minutes.
  • Add kidney beans, coconut milk and water; simmer for 10 minutes.
  • Add rice, correct seasonings to taste.
  • Serve in 1C bowls, garnish each bowl with 1 tsp. coconut
