CINNAMON POLENTA PANCAKES image

Number Of Ingredients 11

1 1/4 C flour
3/4 C cornmeal
1 T sugar
1 t cinnamon
1 t baking powder
1/2 t baking soda
pinch of salt
1 C buttermilk
2 large eggs, beaten
1/4 C olive oil
1/4 water

Steps:

  • In a bowl, whisk the flour with the dry ingredients. In a separate bowl, which the buttermilk with the wet ingredients. Combine, leaving small lumps. Set a griddle over moderate high heat and spray it with vegetable oil spray. When the pan is hot, spoon 1/4 C mounds of batter and spread to form 4-inch rounds. Cook the pancakes until the bottoms are browned and bubbles appear on the surface, about 2 minutes. Flip and cook until browned on the bottom, 1-2 minutes. Serve warm with syrup or warm berry compote.
