CINNAMON CRUMB BANANA BREAD image

1 egg
1 c Turbinado Sugar
1/2 c butter/margarine room temp
1 tsp vanilla
1/2 c buttermilk
2 lg overripe bananas
2 c Flour (part whole wheat)
1/2 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
Crumb Topping:
1/2 c powdered sugar
1/2 c flour
4 T butter - melted
1/2 tsp cinnamon
pinch salt

Steps:

  • Preheat oven to 350 In large bowl, beat sugar well with butter. Add egg and vanilla and beat until smooth. Add mashed bananas and buttermilk. Beat until well combined. Add dry ingredients and stir unit well incorporated. Pour into well greased loaf pan. Make crumb topping by combining all ingredients and mixing with a fork. Gently scatter crumb topping over the top of the bread batter. Bake about 55 minutes until toothpick comes out clean. Allow to cool in pan before inverting.
