Cilantro-Chicken Salad image

If you've got some fresh cilantro, chop it up and use it in this terrific Asian-style chicken salad with mixed veggies and soy sauce.

1/4 cup MIRACLE WHIP Light Dressing
1/4 cup chopped fresh cilantro
2 tsp. soy sauce
1 pkg. (16 oz.) frozen Asian mixed vegetables, thawed, well drained
2 cups chopped cooked chicken
2 Tbsp. chopped cocktail peanuts

Steps:

  • Mix dressing, cilantro and soy sauce until blended.
  • Toss with combined vegetables and chicken in large bowl.
  • Top with nuts.
