CIDER-GLAZED STUFFED CHICKEN image

1 pkg. Stove Top stuffing mix for chicken
2 c. apple cider, divided
1/4 c. butter, divided
1 stalk celery, minced
2 apples, peeled, chopped and divided
6 sm. boneless skinless chicken breast halves
1/4 t. paprika
3 T. brown sugar

Steps:

  • 1. Heat oven to 350. 2. Combine stuffing mix, 1 1/2 c. cider and 1 T. butter in microwaveable bowl; cover with waxed paper. Microwave on high 5-6 min. or until heated through. Fluff with fork. Add celery and half the apples; mix lightly. 2. Place chicken, top-sides down, on cutting board; spread with stuffing. Roll up, starting at one short end of each breast. Place, seam-sides down, in 13x9 baking dish sprayed with cooking spray. Melt 1 T. of the remaining butter; mix with paprika. Brush onto chicken. 3. Bake 40 min. or until chicken is done. Transfer chicken to platter; cover to keep warm. 4. Melt 1 T. of the remaining butter in med. skillet on med-high heat. Add sugar, remaining cider and apples; cook 5-6 min. or until thickened, stirring frequently. Remove from heat; stir in remaining butter until melted. Pour over chicken.
