Chunky portabella Veggie Burgers image

Number Of Ingredients 10

2 cups portabella mushrooms
2 cups cooked black beans, rinsed and divided
1 minced cup broccoli
1/2 cup minced red onion
3 l eggs, beaten
1/2 +2T cup 1/2 cup plus 2 T plank
1 tablespoon montreal Steak seasoning
1 tablespoon Worcestershire
2 tablespoons minced garlic
3/4 cup parmesan cheese

Steps:

  • In a large bowl add 1 cup of black beans and mash with a masher ( chunks are ok)
  • Add in the mushroom, the rest of the beans, brocolli, garlic, onion, Worcestershire and steak seasoning.
  • mix just until coated
  • Add the eggs, cheese and bread crumbs and mix gently with a large spoon until mixture s combined
  • Set aside while you place a non stick pan over medium heat and add in2 T oil.
  • Once the oil start to simmer using dampened hands scoop a 1/2 cup of mixture into the palm of you hand and gently shape into a burger all the while pressing together. Should hold a burger shape. Can add more panko.
  • Place in oil and cook for 3-5 minutes per side till golden brown and crust has formed.
