Chopped Vegetables Salsa image

Can be prepared in 45 minutes or less.

Yield Makes about 2 cups

Number Of Ingredients 9

1 celery rib, minced
1 carrot, minced
1/2 cup minced red bell pepper
1/2 cup minced red onion
2 tablespoons fresh lemon juice
1 tablespoon minced pickled jalapeño chili
1 tablespoon minced fresh coriander leaves
1/2 teaspoon salt
Accompaniment if serving salsa as a dip: tortilla chips

Steps:

  • In a bowl stir together all ingredients and let stand, covered, 30 minutes.
  • Serve salsa with tortilla chips or as a condiment.
