Chopped Egg Sauce image

I serve this with my Salmon Loaf. It is also wonderful with asparagus or simply buttered toast.

Number Of Ingredients 6

3 Tbsp butter
2 Tbsp flour
2 c whole milk
1/4 tsp salt
1/8 tsp pepper
4 hard boiled eggs, chopped

Steps:

  • 1. Melt butter in a heavy saucepan over low heat
  • 2. Stir in flour increasing heat until mixture bubbles gently
  • 3. Cook 2 minutes
  • 4. Remove pan from heat, add milk and stir, return to heat stirring constantly
  • 5. Stir until mixture comes to a boil
  • 6. Reduce heat to medium, stirring constantly adding more milk if mixture becomes too thick
  • 7. Season with salt and pepper, add eggs and mix.
