CHOCOLATE ZUCCHINI MUFFINS (LOAF) image

Yield 18 /2 muffins/loaves

Number Of Ingredients 11

Mix :
3 eggs
1 c canola oil
1 1/2 c white sugar
3 medium/ 2 c unpeeled grated or food processed green zucchini
Blend then add to above:
3 c brown flour
2 t baking soda
2 t cinnamon
3 t cocoa powder
1/2 t salt

Steps:

  • Heat oven to 350 Grease 2- 12 muffin cup pans or 2 loaf pans Bake muffins 25 min, cool, freezes well Bake loaves 50-60 min
