These are a delicious cake like cookie, with a wonderful Mocha frosting, which I have used for many different desserts. This recipe comes from a Taste of Home magazine of mine. I have made these cookies more times than I can remember. Always loved by family and friends. I changed the recipe just a bit to my liking. Photo...

1/2 c butter, softened
1 c packed brown sugar
1 egg
1/2 c milk
1 tsp vanilla
6 - 7 Tbsp baking cocoa
1 2/3 c flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c chopped walnuts
FROSTING
2 c confectioners' sugar
1/4 c baking cocoa
1/4 c butter, softened
1/4 c hot strong brewed coffee
3/4 tsp vanilla extract

Steps:

  • 1. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, milk and vanilla.. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in walnuts.
  • 2. Drop by tablespoonfuls 2 in. apart onto baking sheets. Bake at 350° for 8-10 minutes or until set. Cool on pans for 1 minute before removing to wire racks to cool completely. Frosting: In a large bowl, beat the frosting ingredients until smooth. Frost cookies. I sometimes sprinkle the tops with fine chopped nuts.
