Chocolate Chip Cookies image

Number Of Ingredients 10

2/3 cup applesauce lightly sweetened or unsweetened
2/3 cup northern beans, pureed
2/3 cup sugar
2/3 cup brown sugar
4 egg whites
2 teaspoons vanilla extract
3 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • Heat oven to 375 degrees. Mix applesauce, pureéd beans, sugars, egg whites, and vanilla. Stir in remaining ingredients. Drop dough by rounded teaspoons 2 inches apart onto a baking sheet coated with nonstick cooking spray. Bake 8 to 10 minutes or until light brown. Cool slightly before removing from baking sheet. *If you are diabetic use unsweetened applesauce and replace the sugars with 2/3 cup apple-juice concentrate and 2/3 cup pineapple-juice concentrate. Then increase the flour by 1 to 1 1/3 cups to balance out the solids and liquids. Replace the chocolate chips with 2/3 cup raisins. Remember to have fun experimenting with recipes.
