Chipotle Pico de Gallo image

1 cup coarsely chopped unpeeled seedless cucumber
1/2 cup chopped peeled jicama
1/2 cup chopped red bell pepper
1 tablespoon lime juice
1 tablespoon honey
1/4 teaspoon salt
2 seedless oranges, peeled, coarsely chopped
2 chipotle chiles in adobo sauce (from 11-oz can), chopped
Whole grain tortilla chips, if desired

Steps:

  • In medium bowl, mix all ingredients except chips.
  • Serve immediately with chips, or cover and refrigerate until serving time.
