Chilled Strawberry Soup image

This is a recipe from the owner of my favorite restaurant growing up. Unfortunately, they have long closed, but fortunately, I have some of her wonderful, delicious recipes! This soup is served cold, & a perfect starter (or dessert) in the summer months. Very versatile. Enjoy. Note: I only use 1 & 1/2 cup of sour cream, not 2...

Number Of Ingredients 5

2 c whipping cream (not whipped)
2 c sour cream
2 c strawberries, crushed (fresh or frozen thawed)
3 Tbsp burgundy wine
3 Tbsp sugar

Steps:

  • 1. Mix the sour cream with the whipping cream gently. Then add the strawberries & mix well.
  • 2. Add burgundy & sugar, mix, & refrigerate or serve immediately.
  • 3. Optional: Whip 1 cup of whipping cream stiff & then mix in 1 cup of sour cream. Place a heaping spoonful of this on top of each bowl, if desired.
