CHICKEN/SHRIMP/SAUSAGE GUMBO image

6 boneless chicken thighs
1 lb peeled shrimp
5 sausage links
(marjorem/oregano/cajun season/salt pepper/garlic - season meats)
roux (1 cup olive oil/1 cup all purpose flour)
2 tablespoons of minced garlic
3 qts (12 cups) chicken broth
3 stalks of celery (sliced)
2 large tomatoes (diced)
1 red onion (chopped)
1 white onion (chopped)
2 red peppers (chopped)
2 green peppers (chopped)
**cajun seasoning (1/4 cup):
*2 tsp salt
*2 tsp garlic powder
*2 1/2 tsp paprika
*1 tsp ground black pepper
*1 tsp onion powder
*1 tsp cayenne pepper (hot chilli powder)
*1 1/4 tsp dried oregano
*1 1/4 tsp dried thyme
*1/2 tsp crushed red pepper

Steps:

  • 1. cook sausage in oil (season) and remove, cook shrimp (season) and remove, cook chicken (season) and remove 2. over medium heat, blend olive oil and flour to create a roux, stir constantly until browned and slightly bubbly 3. mix in garlic and cook for 1 minute 4. gradually stir in chicken broth, bring mixture to a boil 5. add in celery, tomatoes, onions, green/red peppers, and cajun seasoning mixture 6. reduce heat and cover/cook for 20 minutes (stir often) 7. mix cooked chicken/sausage/shrimp into mixture, cook for another ten minutes. 8. serve with rice (optional)
