Steps:
- 1. cook sausage in oil (season) and remove, cook shrimp (season) and remove, cook chicken (season) and remove 2. over medium heat, blend olive oil and flour to create a roux, stir constantly until browned and slightly bubbly 3. mix in garlic and cook for 1 minute 4. gradually stir in chicken broth, bring mixture to a boil 5. add in celery, tomatoes, onions, green/red peppers, and cajun seasoning mixture 6. reduce heat and cover/cook for 20 minutes (stir often) 7. mix cooked chicken/sausage/shrimp into mixture, cook for another ten minutes. 8. serve with rice (optional)
