CHICKEN WAIKKI BEACH image

Number Of Ingredients 6

1 lb. boneless chicken (I use tenders) 2 Tbsp. cornstarch
1/2 c. flour 1/4 c. cider vinegar
1/3 c. oil 1/4 tsp. ginger
salt & pepper, to taste 2 chicken bouillon cubes
1 lb. 4 oz. can sliced pineapple 1 Tbsp. soy sauce
1 c. sugar 1 green pepper, sliced

Steps:

  • Coat chicken with flour and fry until brown. Sauce: Drain pineapple. Add enough water to juice to make 1 1/4 cups. Place in saucepan. Add sugar, cornstarch, vinegar, soy sauce, ginger and bouillon. Boil until mixture thickens. Pour over chicken pieces, which have been arranged in casserole dish. Bake, uncovered, at 350 for 30 minutes. Add pineapple and pepper slices and bake 30 minutes longer. Serve over rice.
