Steps:
- In a large heavy pan warm 2 TBS oil. Add sausage and cook until brown (10 minutes). Remove sausage and add chicken with some black pepper and brown (5 minutes). Remove chicken and over moderate heat add celery, onions, garlic, oregano, thyme and bay leaf. Reduce heat and cover stirring occasionally, cook until onions are soft and golden. Spinkle in flour and reduce heat to very low; stirring constantly until incorperated (5minutes).Whisk in wine, add stock and tomatoes and their juice, crushing them through your fingers. Bring to a boil and simmer 30 minutes, partially covered. Cut sausage into 1 inch pieces and add it, chicken and mushrooms. Simmer 30 minutes. When ready to serve stir in parsley.
