CHICKEN SALAD BALL image

3 chicken breast
1 (8oz) cream cheese, softened
1\4 cup mayonnaise
2 Tablespoons lemon juice
1\4 cup green onion, diced
4 dashes hot sauce
2 hard boiled eggs, chopped
1\8 teaspoon salt
1\8 teaspoon lemon pepper
1\8 teaspoon paprika
1 cup almonds, chopped

Steps:

  • Combine paprika,lemon pepper, and salt. Rub onto chicken breast. Cook chicken on medium-low heat until completely cooked. Let cool and chop into small bites. Set aside. Combine cream cheese and mayonnaise in Kitchen Aid mixer. Beat on low until mixture becomes creamy. Scrap sides and combine lemon juice, hot sauce, green onion, and chicken. Mix well. Fold in hard boiled eggs. Using a sheet of saran wrap form mixture into a ball wrapping completely. Chill for one hour. Before serving, roll ball into almonds. Spread it onto bread slices or a peppery cracker.
