Chicken & Rice Casserole image

This has been a family favorite since I was a kid. My Mom always made this and I love it just as much now as I did then!

Number Of Ingredients 8

2 c cooked chicken; chopped
2 c milk
1 can(s) (10 3/4 oz) cream of mushroom soup
1 c uncooked minute white rice
1 can(s) (15 oz) cut green beans; drained
1 can(s) (4 oz) mushroom stems and pieces
1 c shredded white cheddar cheese
1 can(s) (2.8 oz) french fried onions

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. In a large saucepan add the milk and mushroom soup, heat on low heat, stir continously, turn off when starts to steam; remove from burner
  • 3. Add the chicken, rice, green beans, mushrooms, 1/2 cup of the cheese and 1/2 the can of french fried onions. Stir together and pour into casserole dish sprayed with cooking spray.
  • 4. Sprinkle the remaining 1/2 cup of cheese and remaining 1/2 can of french fried onions on top.
  • 5. Bake uncovered 40 min.
