Southern Cast Iron Skillet Sweet Potato and Pecan Casserole image

We went south for Thanksgiving this year and this was served at dinner. This is baked and served right in a cast iron skillet; you can use a 12 or 15 inch cast iron skillet. Scrumptious; it's a side dish and dessert all in one! Prep time does not include the cooking and mashing of the sweet potatoes.

Number Of Ingredients 10

3 cups mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup milk
1 teaspoon vanilla
1/2 cup butter
1 cup brown sugar
1/3 cup self rising flour
1/3 cup butter, melted
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees.
  • Mix the first 6 ingredients and pour into a greased cast iron skillet.
  • Mix together the brown sugar, flour and melted butter; sprinkle on top of sweet potatoes.
  • Sprinkle the 1 cup of pecans on top.
  • Bake for 30 minutes or until a little brown and bubbly.
  • Serve straight out of the skillet.
