CHICKEN PENNE ALFREDO image

Pasta is my FAVORITE food :D If it was all I could eat for the rest of my life (granted that I would be able to make different kinds) I would be ok with that ha ha ha Hope everyone enjoys this recipe Recipe came from boss and sauce recipe came from my aunt

Number Of Ingredients 16

1 box penne noodles
3 chicken breasts (boneless/skinless)
1 chopped tomato
1 chopped broccoli ( i buy it in the microwave steam bags )
1 c heavy whipping cream
1/4 c butter
1 1/2 c parmesan cheese
1 Tbsp cheap bottle chardonnay ( i use tisdale )
1 clove chopped garlic ( i buy 2 in a box )
1 chopped ( into 1/2 rings ) yellow onion
1-2 tsp extra virgin olive oil
1-2 tsp brown sugar
1/8-1/4 c red wine vinegar
1-2 tsp black pepper
1 clove chopped garlic
1-3 Tbsp extra virgin olive oil

Steps:

  • 1. Take Marinade ingredients and combine together ( Red Wine Vinegar, garlic, black pepper, evoo) Brush entire Marinade onto thawed chicken breasts, once finished, wrap chicken breasts in saran wrap and let marinade soak in for 30-45 minutes Cook Chicken according to package directions.
  • 2. Cook Penne noodles according to box directions. Cook broccoli according to package directions Take all alfredo sauce ingredients and place into medium sauce pan. 1 cup heavy whipping cream, 1/4 cup butter, 1 1/2 cup parmesan cheese, 1 tablespoon chardonnay, 1 clove garlic-chopped and cook on low-medium heat until cheese is melted and contents are warmed thoroughly (constantly stirring so NOT to burn cheese too bottom of sauce pan) Take 1/2 ring onion and saute in small frying pan with evoo and brown sugar until carmelized (browned thoroughly)
  • 3. Cut up cooked chicken into strips, pour alfredo sauce onto penne noodles add chicken strips and serve on plate or in a bowl and garnish with chopped tomatoes, onions and broccoli ENJOY!!!!
