Chicken In Golden Sauce image

This recipe is specifically put together for preparing in an electric skillet, making this meal not only easy to prepare but also very tasty.

2 pound(s) chicken breast halves, skinless and boneless
1 tablespoon(s) lemon juice
1/4 cup(s) all purpose flour
1 teaspoon(s) paprika
1 dash(es) freashly ground black pepper
3 tablespoon(s) butter
1 clove(s) garlic, halved
1/2 cup(s) dry white wine
GOLDEN SAUCE
1/4 cup(s) pan liquid
4 - egg yolks, beaten
1 teaspoon(s) snipped parsley
1 teaspoon(s) snipped chives
`1/8 teaspoon(s) ground nutmeg
- salt and pepper to taste
1/2 teaspoon(s) lemon juice

Steps:

  • Skin and split chicken; rub with lemon juice. Mix flour, paprika, pepper, and 1 tsp salt in a paper or plastic bag. Add 2 or 3 pieces of chicken at a time; shake to coat well.
  • Heat butter and garlic in an electric skillet set at 300 F. Once heated; discard garlic.
  • Cook chicken until golden on both side; add wine. Cover; reduce heat to 220 F. Simmer 20 minutes or until tender. Uncover; cook an additional 10 minutes or until liquid is reduced to 1/4 cup.
  • Remove chicken and reserve 1/4 cup pan liquids. Keep chicken hot in oven
  • In sauce pan, combine 1/4 cup pan liquids, 4 beaten egg yolks, 1 cup whipping cream, 1 Tbs each snipped parsley and chives, and 1 tsp ground nutmeg. Season with salt and pepper.
  • Cook and stir on low until slightly thickened. Add 1/2 tsp lemon juice.
  • Pour sauce over chicken and serve.
