Chicken Gorgonzola image

Before my husband made this, I don't think I had ever had Gorgonzola cheese. Wow! What had I been missing? LOL

3 lb chicken breasts, boneless and skinless
1 stalk celery, sliced thin, julienne style
1/2 lb gorgonzola cheese, crumbled
1/2 c butter or margarine + 1 tbsp
1 Tbsp onion, minced
1/8 c honey mustard
2 tsp balsamic vinegar
1/2 c white wine
1/3 c lemon juice
1 1/2 tsp horseradish
1 Tbsp basil, dried
1 tsp cumin
1 Tbsp chili powder
2 tsp lemon pepper

Steps:

  • 1. Blend 1/2 cup butter, minced onion and lemon pepper.
  • 2. Melt in microwave.
  • 3. Add honey mustard, balsamic vinegar, white wine and lemon juice, .
  • 4. Lightly dredge chicken through Cumin and Chili Powder.
  • 5. Melt 1 Tbsp of butter and horseradish in skillet.
  • 6. Brown chick on both sides.
  • 7. Pour melted butter & onion mixture into pan.
  • 8. Add celery. Simmer, covered, for about 20 minutes.
  • 9. Sprinkle Gorgonzola cheese on top of chicken, and then top with basil.
  • 10. Simmer for 5 to 10 minutes, or until cheese is melted.
