CHICKEN BRAISED WITH GINGER AND STAR ANISE image

1t sichuan peppercorns
2T peanut oil
3cm x 2cm (1 x 3/4in)piece fresh ginger, julienned
2 garlic cloves, chopped
1kg (2lb 4oz) boneless, skinless chicken thigh fillets, cut in half
4T Chinese rice wine
1T honey
3T light soy sauce
1 star anise

Steps:

  • Heat a wok over medium heat, add the peppercorns and cook, stirring to prevent burning, for 2-4 minutes, or until fragrant. Remove and lightly crush with the back of a knife. Reheat the wok, add the oil and swirl to coat. Add the ginger and garlic, and cook over low heat for 1-2 minutes or until slightly golden. Add the chicken, increase the heat to medium and cook for 3 minutes, or until browned all over. Add the peppercorns, wine, honey, soy and star anise to the wok, reduce heat to low and simmer, covered, for 20 minutes, or until the chicken is tender.
