CHICKEN AND MANO TANGO image

Number Of Ingredients 9

1 large or 2 small ripe mangoes
2 sticks of celery
2 limes
4 large green onions
1/2 cup + 2 tbsp olive oil
1 large bunch fresh cilantro
1 medium sized roasting chicken coooked
4 large leaves of lettuce
half a cucumber

Steps:

  • Peel the mangoes and remove the seed. Scrub celery and roughly chip. Juice the limes. Trim green onions and roughly chop. Blend all ingredients in a food processor or blender. Add the olive oil gradually to the mixture. Chop the cilantro and add to the dressing, do not puree.
