Chicken and Fresh Grapefruit Stir Fry image

How to make Chicken and Fresh Grapefruit Stir Fry

Number Of Ingredients 10

1 grapefruit, peeled and sectioned; reserve juice
1 can (8 ounce) pineapple chunks, drained; reserve juice
1 Tablespoon cornstarch
1 teaspoon reduced sodium soy sauce
1/2 tablespoon vegetable oil
2 (1/2 pound) boneless skinless chicken breast halves, cut into 1/2- inch strips
1 medium clove garlic, minced
1/4 pound snow peas, trimmed
2 green onions, sliced diagonally
Hot cooked rice

Steps:

  • Place grapefruit sections and pineapple chunks in a bowl and set aside. Combine grapefruit juice and pineapple juice and add enough water to equal 1 cup liquid. Whisk cornstarch and soy sauce into juice mixture.
  • Heat oil in a large skillet over medium heat. Stir-fry chicken for 3 minutes. Add garlic and continue cooking for 2 minutes longer or until lightly browned.
  • Add snow peas and juice mixture; cook, stirring until thickened. Add grapefruit, pineapple and green onions and cook until heated through.
  • Serve over hot rice.
