CHICKEN AIOLI image

Number Of Ingredients 19

For the chicken:
4 garlic cloves, chopped
2 T olive oil
2 T soy sauce
1 t lemon juice
1 t ground ginger
1 t cardamom pods (about 16)
1 t finely grated orange zest
1 star anise
1/2 t cinnamon
1/2 t black pepper
1 pinch ground cloves
2 1/2 lb chicken wings (or thighs)
For the aioli:
4 garlic cloves, chopped
1/2 t coarse sea salt
1 egg yolk
1 cup olive oil
lemon juice to taste

Steps:

  • Coarsely chop chicken marinade ingredients together in pestle or blender, to rough purée. Marinate chicken in this for 6 hours or overnight in refrigerator. Broil wings (I baked chicken thighs in covered pan) and then serve with aioli.
