CHERRY AND ALMOND GLAZED PORK LOIN image

3 pound pork loin
salt and pepper
10 oz jar of cherry preserves
1/4 c red wine vinegar
2 T light corn syrup
1/4 t salt
1/4 t cinnamon
1/4 t nutmeg
1/4 t cloves
1/4 c toasted slivered almonds

Steps:

  • Preheat oven to 325 degrees. 1. Trim excess fat from roast. Lightly rub roast with salt and pepper. Place on rack in shallow roasting pan. Cook 2 1/2 hours. 2. In saucepan, combine all remaining items except almonds. Cook and stir to boiling. Reduce heat; simmer 2 minutes. Add almonds; keep warm on very low heat. 3. Spoon some of the mixture over the roast to glaze. Continue cooking about 30 minutes, until internal temperature reaches 170 degrees. Baste several times with glaze mixture. 4. Remove roast to carving board. Let rest for 15 minutes. Slice and serve.
