32 wonton wrappers
4 oz. cheddar, grated
8 oz. nonfat cream cheese
1 T. Dijon mustard
1/4 t. cayenne pepper
1/4 c. red bell pepper, chopped
14 oz. artichoke hearts, drained & chopped
Fresh parsley (optional)

Steps:

  • Preheat oven to 350F. Spray mini muffin cups with Pam. Press wonton wrapper into each (ends extend above cups). Spray edges of wrappers with Pam. Set aside. Combine cheeses and seasonings; stir in bell pepper and artichoke hearts. Spoon about 1 T. cheese mixture into each cup. Bake 18-20 min. until set and lightly browned. Garnish with parsley if desired. Serve warm.
