Steps:
- In large skillet sautee onions and garlic in olive oil until soft, about 5 mins. Add chickpeas straight from can including the water. Add lemon juice, salt, and spices. Cover and simmer for about 15 minutes, adding water if necessary, until chickpeas are cooked and soft. Add spinach and cover until wilted about 3-5 mins. Serve immediately. Over rice or alone as desired.
