CHANA MASALA WITH SPINACH image

Number Of Ingredients 13

1 can chickpeas undrained
1/2 onion diced
5-6 cloves garlic minced
3 tbsp olive oil
1 lemon (juice only)
1 large bunch spinach, rinsed
1/2 tsp salt
1 heaping Tbsp of Masala spice blend:
1 tsp curry powder
1 tsp coriander powder
1 tsp cumin
1 tsp garam masala
Optional Rice

Steps:

  • In large skillet sautee onions and garlic in olive oil until soft, about 5 mins. Add chickpeas straight from can including the water. Add lemon juice, salt, and spices. Cover and simmer for about 15 minutes, adding water if necessary, until chickpeas are cooked and soft. Add spinach and cover until wilted about 3-5 mins. Serve immediately. Over rice or alone as desired.
