CARAMEL PEARS image

Number Of Ingredients 5

6 ripe (but still firm) pears
lemon juice (optional)
9 tbsp sugar
6 tbsp butter
12 tbsp (3/4 cup) heavy cream

Steps:

  • Preheat oven to 500 Peel, quarter and core pears. If preparing ahead, toss pears in lemon juice. Divide between 6 ramequins or arrange closely in ungreased, shallow baking dish measuring 8 x ll. Sprinkle pears generously with sugar, about 1/2 tbsp per pear. Dot each quarter with butter (1 tbsp per pear) bake uncovered for 15 - 20 minutes. Baste once or twice until sugar is burned to a rich brown. Pour cream over top of pears, 2 tbsp per pear. Bake another minute or two until cream has blended in and serve while hot
