Steps:
- Preheat oven to 350. Spray 12 muffin cups with non-stick spray or line with paper. In a large bowl, combine flour, sugar, baking powder, coffee powder, salt, and cinnamon. Set aside. In a small bowl, stir together milk, butter, egg, and vanilla until well blended. Make a well in the center of the dry ingredients, add the milk mixture, and stir until just combined. Stir in chocolate chips. Spoon batter into muffin tins and bake 15-20 minutes. Cool muffins 5 mins in rack before turing out.
