Campfire Potatoes image

My grandchildren love Campfire Potatoes with Grilled Shrimp Skewers. I love that everything is on the grill and the clean up is so easy. I usually serve Grilled Garlic Mushrooms and Grilled Vegetable Kabobs.

Number Of Ingredients 8

6 large potatoes, peeled and thinly sliced
1 large onion, thinly sliced
1/2 c cheddar cheese, shredded
2 Tbsp fresh parsley, chopped
1 Tbsp worcestershire sauce
kosher salt and freshly ground black pepper
1/3 c chicken broth
6 slice bacon, cooked and crumbled (optional)

Steps:

  • 1. Place the potatoes and onion on a large piece of heavy-duty foil (about 12"x 20"); dot with butter.
  • 2. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes.
  • 3. Fold foil up around potatoes and add broth and bacon pieces if using. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.
