Camp Rice in the Instant Pot image

Camp Rice has become one of our favorite dishes. It can be either a side dish or the main course. The recipe originally came from a book on camping. Over 50 years ago I adapted the recipe to one I could use in the kitchen. Then 30 years ago I changed the recipe so I could cook it in a rice cooker. Now I have made some adaptations...

Number Of Ingredients 8

2 large onions, chopped
a fist size chunk of salt pork or bacon, chopped
1 c long grain rice, uncooked
1 large can tomatoes, about a quart
1 Tbsp sugar
1 tsp celery seeds
1/4 tsp black pepper
1 c cheddar cheese, shredded

Steps:

  • 1. Set Instant Pot to SAUTE. When the Instant Pot has heated up add the salt pork and cook for about 4 minutes stirring every 30 seconds or so.
  • 2. Add the chopped onions and cook another 4 or 5 minutes stirring every 30 seconds or so.
  • 3. Puree the tomatoes in a blender and add them to the Instant Pot along with rice, sugar, celery seed, and black pepper. Give a quick stir to incorporate the ingredients together.
  • 4. Close the Instant Pot lid and push the RICE button. (Cooking rice is one of the programs available for the Instant Pot.)
  • 5. After pressure cooking has finished allow the cooker to cool down naturally until the float valve drops down, this will take 10 to 15 minutes.
  • 6. Open the lid and spread the shredded cheese over the camp rice.
  • 7. Serve and enjoy.
