Cajun Shrimp with Creamy Sauce image

Really tasty shrimp dish. You can control how spicy you want it by adding more or less cajun seasoning.

1 lb shrimp peeled and deveined
2 Tbsp cajun seasoning
1 stick butter
3 clove garlic minced
1 c scallions thinly sliced divided
1/4 c dry white wine
4 Tbsp flour
1 1/2 c heavy cream
salt to taste

Steps:

  • 1. Season the shrimp with the cajun seasoning. Add 3 tbsp of butter to saute pan and cook the shrimp on each side about 3 minutes per side. Remove from pan and set aside.
  • 2. Add the rest of the butter to pan. Add garlic and the white parts of the scallions. Saute 2 minutes. Add the wine and let most evaporate scrapping up bits.
  • 3. Add the flour and make a roux and cook 3 minutes. Add the heavy cream. Season to taste with salt.
  • 4. Serve the sauce on the plate with shrimp on top and garnish with the green parts of the scallion.
