Caesar Salad image

Years ago, I found this on the back of a Pepperidge Farm Crouton box. They called for anchovies that you ground into a paste; I opted for store bought anchovy paste.

Number Of Ingredients 9

1 romaine lettuce head, washed and torn
1/2 tube(s) anchovy paste
1/2 tsp freshly ground pepper
1 Tbsp freshly squeezed lemon juice
1/4 c egg substitute
1/3 c olive oil
2 clove garlic, crushed
parmesan cheese, freshly grated
croutons

Steps:

  • 1. Wash and spin romaine ahead of time and crisp in the refrigerator.
  • 2. Mix garlic, pepper, lemon juice, egg substitute, anchovy paste and olive oil.
  • 3. Pour dressing over Romaine, sprinkle Parmesan and croutons and toss well.
