Yield 2-4 servings

Number Of Ingredients 7

1 cucumber
2 1/4 cups (18 oz) whole-milk yogurt
1 tsp dried mint
1-2 tsp salt
leaves from 1 bunch fresh mint, chopped
1-2 cloves garlic, minced
extra virgin olive oil

Steps:

  • 1. Peel and finely dice the cucumber. 2. In a mixing bowl, combine cucumber and yogurt. Stir in dried mint, salt, most of the fresh mint and garlic. 3. Place in serving dish, sprinkle with remaining mint and drizzle with oil.
